Taste of Spring at Rose Water Restaurant in Brooklyn

Rose Water Restaurant in Brooklyn thrives on making sumptuous, seasonal dishes. If they’re not on the menu yet, watch for ramps to appear sometime soon. Rose Water does lovely, uninhibited things with ramps. Things so good, they should be illegal.

I had the breakfast pictured here at Rose Water Restaurant a while ago, and I’m still dreaming of it: poached eggs, fresh asparagus, spring veggies, and all of it bathed in a savory sauce of ramps and magic.

Don’t know what ramps are? You’re missing out! Ramps are also known as wild leeks. They’re milder and more tender than leeks, though, with a dose of garlicky goodness mixed in. They can apparently be found growing wild this time of year, if you’re the kind of adventurous soul who’s up for foraging. Or you can look for them at farmers’ markets or restaurants that depend upon seasonal produce.

Rose Water whipped those ramps into a sauce that rivals hollandaise, with the same depth of flavor, but without the yolky buttery guilt. My kingdom for that recipe.

You can find Rose Water Restaurant at 787 Union Street in Park Slope, Brooklyn. It’s a great place to go for brunch on a Saturday morning, before you visit the blooming cherry trees at the Brooklyn Botanical Garden.
